Until the contest on January 31st, find here the portraits of the eight candidates running for the 55th edition of the ‘Taittinger’. Today meet Hirofumi Kanbe, representing Japan. 

Japan-based restaurant “Prunier” has demonstrated its commitment to our competition by regularly nominating candidates. Hirofumi has worked there for a long time and one of his colleagues had formerly taken part in the competition. He took up the mantle with aplomb by beating the other Japanese applicants in the previous round. This meticulous candidate spent a long time practising in the kitchen before finetuning his chosen recipe. With his exacting standards and high levels of perseverance, he hopes that his dish will blow the judges away. He possesses all the dedication that you would expect from a Japanese Chef, striving for perfection in his dish without trying to bask in its limelight. He wants to remain at the service of his restaurant, of his Chef and, above all, to satisfy his customers.

His restaurant “Prunier” has just clinched its first Michelin star, so let’s consider this recognition of high-quality cuisine a sign of luck for Hirofumi.
