To mark the forthcoming 54th edition of the Taittinger – International Signature Cuisine Prize on 31 May, Secretary General Jean-Pierre Redont and Éric Birlouez, an agricultural engineer and sociologist in agriculture and food, are taking part in a conversation on this year’s selected theme for participants: beef. Here they not only tackle the origins and history of the cow, but also the symbolism of this animal for various civilisations as well as its place in the human diet through the ages.
