Thijs works in the ‘Noble’ restaurant, which has 1 Michelin star.
At the age of 12, he discovered cooking through pastry-making. He then decided to become a chef and attended a hotel school. 

Along the way, he deliberately wanted to go through all the positions before becoming a chef. His first internship was as a dishwasher. His inspiration came from visiting many Michelin-starred restaurants and reading chefs’ books.

Today, having mastered the basics gives him the freedom to develop his creativity. For Thijs, this profession is above all a collective adventure, where the right gestures can only be learned by surrounding oneself with elders, so for him it’s already time to think about passing on.

But will he win first place for the Netherlands like Jan Smink did in 2023?
