To mark the forthcoming of the ‘Taittinger’ – International Signature Cuisine Prize – that will be held on the 30th of January 2024, meet Akinori Tajima, candidate for Japan.
Akinori Tajima was very moved during his victory for the Japanese ‘Taittinger’ selection.
This victory represents a lot of effort and self-sacrifice for a candidate ; time spent preparing your dish at the expense of family life. This is also the reality of engaging in a competition, hours outside of working time, stolen from daily life.
Being the winner was an opportunity to pay tribute to his family and to his Chef, Renaud Augier, who assured him of his full support. Behind a candidate, it is also the effort of a Chef, who gives him the means in goods and equipment to train and the commitment of the brigade.
A personal victory is also a reflection of a collective incentive.
Renaud Augier, a French chef who has lived in Japan for a long time, runs the restaurant ‘La Tour d’Argent’. He became MOF during the last promotion and finished second of the Taittinger Prize a few years ago.
Renaud well reflects this value of transmission which is an integral part of a Chef’s career. We wish Akinori Tajima to reach the top step of the podium like Ryo Horiuchi in 2022.
