It is this product that nine international chefs will have to cook in the final of the ArsNova Prize (formerly the “Taittinger Prize”) on 4 February 2025: the female duckling, or canette.
To mark the occasion, we met with Valéry Miéral, the 4th generation of the Bresse family firm, MIERAL, which selects the very best poultry from poultry farmers for the greatest restaurant tables. Valéry Miéral is also this year’s supplier of the female ducklings for the ArsNova prize.
