Matthieu Maeder, 26, from the Gruyère region, is sous-chef at the Valrose in Rougemont.

Immersed in the world of gastronomy from an early age thanks to his father, a restaurateur, he quickly developed a passion for this demanding art.

Trained in renowned establishments such as Les Trois Tours in Fribourg and La Pinte des Mossettes in Cerniat, Matthieu perfected his mastery of culinary techniques and his respect for local, seasonal produce.

Inspired by his Nordic travels, he enriches his cuisine with a creativity marked by simplicity and fermentation. Between tradition and modernity, his culinary vision blends rigour, passion and innovation.
